Carrick's Dry Riesling is hand-harvested and picked slightly later than the other two Rieslings, which helps to bring a riper fruit spectrum to balance the high acidity, when sugar is no longer playing a role. The fruit is whole-bunch pressed and fermented naturally with wild yeasts. Fermented and aged in old oak barriques, which give further depth and complexity to this wine.
