The vineyard is tended by hand, allowing for careful management of individual vines, throughout the season. Each parcel is fermented separately in open top fermenters and undergoes wild, indigenous yeast, spontaneous ferments. It is a premium wine made from predominantly Dijon clones on various rootstocks, from vines planted in 1996.
Matured in French oak barrique for 8 months, with 9% new oak, the Unravelled is light-bodied and finely structured. The 2018 has lovely flow, with cherry and black plum notes, as well as some subtle spice. At KiwiDrops, we've been known to enjoy this as our day to day dinner wine.
